Homemade Waffles with Strawberries! (Be Mine, Valentine)

Happy Valentine’s!  Hope your day is filled with sweet treats :)  As usual, we skip out on Valentine crowds and do something special another day.  So much more fun and peaceful!  I did cook us a little Valentine’s breakfast with homemade waffles topped with maple syrup and fresh strawberries!  Yum!

Here’s my favorite waffle recipe right now.  It’s adapted from my good ‘ol Betty Crocker Cookbook.

You’ll need:

waffle maker
2 large eggs
2 c. flour
1 and 3/4 c. milk
1/2 c. vegetable oil (I use canola oil)
1 T. packed brown sugar
1 tsp. pure vanilla extract
4 tsp. baking powder
1/4 tsp. salt
toppings:  maple syrup, fresh strawberries
Heat waffle maker to desired setting.  Beat eggs in bowl with fork until fluffy.  Beat in remaining ingredients just until smooth.  Pour batter into waffle maker and cook for 5 min. or until steaming stops.  Enjoy!
