4 ways to pack a tasty lunch (and a cool lunchbox!)
Left to his own devices B was taking the saddest lunches to work. We’re talkin’ a couple granola bars tossed in with a canned Dr. Pepper and a family size bag of chips. Maybe a can of chili. Yeah, poor guy was so stressed he didn’t even have time to find a chip bag. When I was sick I had no idea how bad his lunches had become! Not like I’m one to talk… I was the girl in high school who’s daily lunch was a bag of Cheez-its and a DP from the vending machine. Or I just didn’t eat lunch at all. or. breakfast. Pathetic, I know. p.s. no wonder my gallbladder kicked the bucket.
So yeah, after surgery (and feeling good!) one of my top priorities was better lunches for B. So I started pinning lunch ideas on Pinterest. Then I found the PlanetBox and decided he needed a new lunchbox too. And since they were so cool, I had to get on too. I know, I work from home. ha! Well I bought the Rover for me – it’s smaller and great for little kids, small appetites and days when you want to take a few snacks to the beach or lake! B got the Launch which is bigger and better for big appetites. Yep, these are pricy lunch boxes but TOTALLY worth the investment!
Let’s see: you can stick these babies in the dishwasher. They’re stainless steel, look cool and hold up well. I also love that I almost never have to use plastic baggies! For this reason I can pack a lunch really fast. I’ve since learned that chips do need to go in a plastic bag if you’re keeping the lunchbox in a fridge because the chips will get soggy. So the husband says. OH and I love the carrying bags they come with. Now B can carry a slim bag instead of one of those big cumbersome lunchbox cooler bags. Another bonus that kids love? Foods don’t touch each other.
Did I mention they look cool?
Here’s my Rover lunchbox. I use it for snacks to the lake and stuff. Of course, I picked the turquoise bag. My ideal snack box (for 2) featured homemade rice crispy bars, red and green grapes, mini PB sliders (use a round cutter to cut out the bread) fresh apple slices and mixed nuts. It was a great snack after hiking!
B’s lunchbox is the Launch. Here are some of his lunches…
Loving the sandwich thins they’re selling now. This lunch got big thumbs up with the *not boring* sandwich – mayo, sliced pickles, baby spinach, cheddar cheese, a little bacon and ham. Fresh fruit and a mix of nuts with cheez-its. Oh and a rice crispy bar… hey, I went through a BIG rice crispy bar phase… ok? ;)
Peanut butter sandwich with lemon thin cookies, dried pineapple, fresh fruit and wheat crackers and nuts.
Then the peanut butter sandwich got all fancyyyyy pants up in here. This is my favorite way to make them now, cut into quarters with the edges dipped in crushed peanuts. Sometimes I add jelly for B. There’s also yogurt, fresh fruit, dried pineapple and these raisin / rosemary crisps from Trader Joes? I’ll have to see what they were called. They were awesome!
Next was a Pinterest idea, using Laughing Cow cheese mixed with cucumber and chicken to make a sandwich filling. This also got a big thumbs up.
It’s crazy but B has this aversion to things like chicken and pasta salad. I KNOW. But maybe there’s hope for the guy… he did seem to enjoy this (which I happily reminded him is pretty much chicken salad!!) ha ha. Sliced yellow and red peppers with cream cheese and chives, Wheat Thins and YES the ever popular rice crispy bar. ;)

Pin ItSUP ATX Paddle Boards!!!
You guys!! Remember when we took that trip to Austin and rented SUPs? And how I said we were going to get paddle boards?? Well we finally have SUP ATX paddle boards!!! SO. STOKED. Of course I really wanted to get these bad boys last summer but ya’know, spent all that $$$$ on Camperrrr. It’ll be summer here in TX pretty quick and now we have our SUPs!
SUP ATX had a pre-season sale so I picked out the Journey boards in blue and green. The blue board (which is a gorgeous turquoise blue!) is mine. She’s BEAUTIFUL. I love her, and she loves me. Anyway, I ordered the boards last week and they arrived quickly by freight! I spent the first hour just sitting on my board waiting for B to come home. Ha! Now B’s board had a slight white scratch under the finish on the green, so I emailed a pic to SUP ATX just to make sure it wasn’t damage (his box was a little abused.) As we figured it was just cosmetic and happened during construction but SUP ATX promptly offered to send us a replacement board OR a 150.00 refund and keep the board.
Totally took the refund. B will just slap a “blame Laird” sticker on there. Or something. Because really, blame Laird.
Eeeeeeeeeeee!!! yes. I totally squealed when I opened them. It was the best.

Um, yeah. I have no idea what’s going on here.

So here’s the thing, I sorta kinda forgot how BIG these things are! The worst part about getting our boards on a warm day was no way to get them to the water!! Yeah, I hadn’t ordered a rack yet! Took care of that last night… waiting for our truck rack / SUP taxi to ship. Ahhhhh!
